The Dining Room @ Cameron Highlands Resort

When the sun rises over these slopes, guests of Cameron Highlands' finest resort make their eager way to The Dining Room for a breakfast of champions.

Can't resist free-range poached eggs on macaire-style potato croquettes with hollandaise sauce & wild mushrooms ...

... or a plateful of scrambled eggs, hash browns, beef bacon, breakfast sausage, stewed tomato & fried farmhouse bread.

Omelet with aged brie de meaux, smoked salmon & chives.

Customize your order: make the char kuey teow, cooked to order, as egg-filled as possible.

On a no-egg diet? Have the waffles with banana butterscotch, strawberry compote, king island cream & cinnamon-crusted mango tempura ...

... or these warm buttermilk pancakes layered with apple compote, pineapple fritters, honeycomb nougat & double cream.

Bakery basket, to ensure enough carbs are consumed for folks planning nature trail expeditions.

Watermelon juice, coffee, tea, all present & accounted for.

When night falls, the mood is transformed into one of glamorous panache.

Fine food to pair with the setting for this occasion, including the likes of jumbo ocean crab tian with sakura cress & alphonso mango salsa.

Pan-seared cod with cauliflower mousse, shiitake mushrooms & highland veggie emulsion.

Double-boiled chicken consomme with mushrooms & bamboo pith infused with Chinese herbs.

Mustard-herb crusted lamb loin with basil-scented ratatouille & rosemary sauce.

Cream of pumpkin soup topped with seared scallops, chives & cinnamon-spiced creme fraiche, alongside prawn & porcini ravioli on charred fennel with shellfish nage.

Bronze duck leg with cranberry-citrus sauce, spuds & green bean almondine, followed by roast beef wellington, seared goose liver, madeira jus, black truffle shards & spinach.

Vegetarian risotto, a tasty meatless option that the kitchen can whip up with ease.

Dessert trio: mince pie with orange sauce, pudding with brandy butter & strawberry trifle with dark chocolate praline.

Coconut-pandan panna cotta with passion fruit sauce.
