Ceviche _ citrus-cured prawns tossed with tomatoes, onions, avocado, chili & cilantro, served chilled in shallow bowls with tortilla chips. Beware: this looks & sounds like an innocent snack, but some hidden bits of chili inside are incendiary!
Chile rellenos _ baked baby capsicums stuffed with plump prawns, roast garlic & chili pablo. Served in a pan filled with creamy kitchen-made tomato gravy.
Chorizo fondue with roasted jalapenos. Cheesy-thick & spicy, it's like a culinary narcotic; we were hooked from the first bite & couldn't stop till each drop was mopped up with the flat bread.
Maize fries _ fried corn maize & jalapenos, cut into crispy chips & partnered with salsa loco (stewed tomatillo, green chili, jalapeno & habanero). Bored of French fries? Here's another addictive alternative, intriguingly grainy-textured.
Chicken tacos _ soft corn tortillas, folded with refried beans & lettuce, served with salsa arobal (toasted pecan nuts, dried red chili salsa & lime). All salsas are made fresh in Loco's kitchen.
Beef burritos filled with refried beans, avocado & lettuce, eaten with sour cream & guacamole. Fabulous as finger food, stellar for sharing.
Watermelon juice with tequila, Monin liquor & homemade sours, beside a chocolate Margarita. There was probably more, but those photos are lost forever in a haze of alcohol.
Psychedelic colors contribute to the sensation of being sloshed silly.
