El Cerdo

The peak season for white asparagus seems to be ending, but El Cerdo still has some fresh-tasting ones. Marvelous when rolled with Serrano ham.

Ham knuckle "Berliner Eisbein," cured in brine for two weeks to make the meat more flavourful, then boiled to tender, juicy perfection. A nice change from the crispy pork knuckles that dominate most other Western outlets.
